Well-known in Armenia, Azerbaijan, Georgia, Persia, and Albania, khash is a dish of boiled cow or sheep parts, which might include the head, feet, and stomach. Called "khashi" in Georgia, it's served with onions, milk, and salt, and is typically eaten in the morning, or to help get rid of a hangover. In Iran, the dish is seasoned with lemon and cinnamon.
